Vegan Mummy Mint Cheat Choc Chip Ice Cream Recipe

A super special little summer treat to keep the babes and adults both happy. This can be done in a flash, here’s how to go about it below. We hope you enjoy and do message us any sunny yummy pics you have if you make any!

Ingredients

  1. A bag of mint YummyComb
  2. A tub your favourite tub of vanilla ice cream – Our family are in love with the delicious vegan Swedish Glace vegan (totally the best creamy vanilla ice cream out there!)
  3. House favourite sprinkles
  4. Ice cream cones if you have them in the cupboard (if you have no wafer cones you can still keep it fun, use glass tumblers for grown-ups & little plastic beakers for the babes.)

Recipe

Our mint YummyComb chocolate has just the right blend of minty taste to ensure when crushed and mixed in with the ice cream you get that cool minty hit. Much better than raking through the cupboards for your peppermint essence thats 2 years out of date!

The chocolate and honeycomb combo is great for a good smash and mix up with the ice cream to get all the chef-y texture going on. Be as rustic or fine with the smashing to preference.

Pour your chocolate honeycomb nuggets into a bowl and bash them with the end of a rolling pin. A great source of exercise to balance out any stress levels that may have been raised throughout the day!

Slop your chosen ice cream on top of the newly crushed bits and mix. This is a start mix to loosen the ice cream then finish off mixing by slopping it all back into the ice cream tub. This then enables you to spoon out the desired amount and be able to pop leftovers back into the freezer, easy.

We like to pour sprinkles into a bowl when I do Ice cream cones, far less mess and waste just to twist the ice cream into them – rather than sprinkle on top!

Grown ups may want some crunched up left over YummyComb rather than sprinkles
