Ingredients:

  • 2 cups all-purpose flour
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 1/2 cup unsalted butter, room temperature
  • 1/2 cup light brown sugar, packed
  • ½ cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup semi-sweet chocolate chips or chunks
  • 1 ½ cups honeycomb pieces (chopped into small bits if using a large piece)

Directions:

  1. Preheat oven to 350°F. Line two cookie sheets with parchment paper and set aside.
  2. In a medium bowl, whisk together the flour, baking soda, and salt until well combined; set aside.
  3. Using an electric mixer on medium speed, beat together the butter, brown sugar and granulated sugar until light and fluffy – about 2 minutes. Add the eggs one at a time while continuing to mix on medium speed until fully incorporated after each addition. Beat in the vanilla extract until combined.
  4. Reduce mixer speed to low and slowly add in the dry ingredients, mixing just until incorporated – it’s better to slightly undermix than overmix here! Stir in the chocolate chips and honeycomb pieces by hand using a rubber spatula or wooden spoon- use caution as overmixing can lead to tough cookies!
  5. Drop dough onto prepared cookie sheets by tablespoonfuls, forming into mounds that are about 2 inches apart from one another (they will spread!). Bake for 10-11 minutes or until edges are golden and centers appear soft but set – they should appear slightly ‘cakey’ overall rather than crispy like traditional cookies! Let cool for 5 minutes on cookie sheet before transferring to cooling rack for complete cooling Enjoy!
